The five, up close

01 · 1,300–1,400°C

Porcelain

The thoroughbred.

Kaolin clay fired at 1,300–1,400°C until it vitrifies into a glassy, non-porous body. Translucent if held to light. Rings like a bell when tapped. Invented in Tang-dynasty China; Europe spent a thousand years trying to copy it.

Feel

Cool to the touch even when full. Thin walls feel almost weightless against the lip. The drink leads, the vessel disappears.

Best for

Espresso, cappuccino, tea ceremony, anything where the drink is the star.

Watch out

Thin rims chip if you stack them carelessly. Thermal-shock dislikes pouring boiling water into a cold cup.

02 · 1,200–1,300°C

Stoneware

The honest workhorse.

A denser clay fired at 1,200–1,300°C. Opaque, slightly grainy, takes glaze beautifully. The material of most hand-thrown studio pottery and 90% of the mugs people genuinely love.

Feel

Substantial in the hand. Walls thick enough that you feel the warmth slowly seep through, not all at once. The mug you reach for without thinking.

Watch out

Heavier than it looks; full mug + sleepy hand = surprising drop.

03 · ~800°C (enamel layer)

Enamel-on-Steel

The pioneer.

Sheet steel coated in vitreous enamel — basically a thin layer of glass fused on at ~800°C. Lightweight, tough enough for a backpack, develops a patina of chips that feels like a logbook of where it's been.

Feel

Hot. Genuinely. The handle conducts heat almost as fast as the body, so you'll learn to grip lower or use a cloth. There's a romance to the slight metallic taste at the rim.

Best for

Camping, fire pits, work sites, second cabins.

Watch out

Conducts heat like crazy. Chips reveal raw steel that can rust if not dried.

04 · Formed ~1,500°C, tempered at ~620°C

Tempered Glass

The exhibitionist.

Borosilicate or tempered soda-lime glass, formed and rapidly cooled to lock in compressive stress so it resists thermal shock. Lets you see the layers: espresso, milk, foam, cross-sectioned.

Feel

Almost no insulation, so the temperature of the drink is the temperature of your hand. Visually stunning. Tactically a bit demanding.

Best for

Lattes, cortados, iced anything, drinks you want to photograph.

Watch out

Tempered glass doesn't crack — it shatters into pebbles. Don't use untempered glassware for hot liquid.

05 · N/A (machined and welded)

Stainless Steel (Vacuum-Insulated)

The engineer.

Two walls of 18/8 stainless steel with a vacuum sealed between them. Heat can't conduct or convect across a vacuum, so the drink stays close to its starting temperature for hours. Modern tumblers add a copper layer for extra radiation shielding.

Feel

Cool exterior even with boiling coffee inside — the whole point. Lacks the ceremony of ceramic; you don't sip from a steel mug, you commute with one.

Slight metallic note in delicate teas. Lid gaskets need actual cleaning or they get funky.

FAQ

Material questions

What material holds heat best?

Stoneware wins for sustained heat — its dense, thick walls hold thermal mass longest. Porcelain is close behind. Glass and enamel cool fastest.

Is enamel safe for hot coffee?

Yes — enamel is a glass coating fused to steel at very high temperatures and is food-safe. Just avoid chipped enamel, which exposes the underlying steel to rust.

Why does my glass mug cool so fast?

Glass has low thermal mass and conducts heat outward quickly. Double-walled borosilicate glass solves this by trapping a thin air gap between two layers.

Is porcelain or stoneware better for everyday coffee?

Porcelain is lighter, more elegant, and rings when you tap it. Stoneware is heavier, holds heat longer, and feels more grounded in the hand. For daily drip, most people prefer stoneware.

Are stainless steel mugs safe for hot drinks?

Yes, food-grade 18/8 stainless steel is inert and safe. Single-wall steel will burn your hand and cool fast; double-wall vacuum-insulated travel mugs are best for actually drinking from.
